1/2 cup of honey
1 1/2 cups of white sugar
1/4 cup of water
2 teaspoons of bicarbonate soda
- Line a deep lamington tray with grease proof paper, making sure it covers not only the base but the sides as well.
- Place honey, sugar and water in a deep saucepan and cook on a medium high temperature until it emulsifies and comes to the boil (between 1-2 minutes).
- Boil for about 4-5 minutes watching closely for a colour change from blonde to amber.
- Quickly sift in the bicarbonate soda, whisk it for a few seconds (it will puff up like crazy!) and pour it into the lamington tray.
- It will cool down and be ready to crack and devour in half an hour.
Simple right!
There are just two tips I always have to remember:
1. As soon as the colour changes to amber throw in the bicarb, if you leave it for just a few more seconds it will be burnt.
2. Store it in an air tight container in the freezer, this will keep it nice and dry.
